NO

You will not be able to use any items with an engineering requirement if you
drop engineering.

Skinning, Mining, Herbalism.... they are all GATHERING skills and are indeed
useful for making gold. But, they level quickly and have minimal training
costs (no recipes). So, it is a small matter to drop one gathering skill for
another. But, dropping a crafting skill is a much bigger thing.

Do you have an alt you want to level? Make the alt the skinner (add
herbalism or mining for maximum gathering profit).
